MINDFUL: An approach to eating that focuses on transparency of ingredients, delicious food, and satisfying portions to encourage a healthier lifestyle. all dishes are under 550 calories, trans fat-free, less than 35% of calories from fat, and less then 700 mg of sodium. Mindful dishes are served every day at Gibson Dining Hall during each meal. 

SALAD BAR & CRISP CREATIONS: The salad bar is a favorite among students and staff at Gibson Dining Hall! Offering fresh, crisp ingredients to choose from, it’s perfect for a choose-your-own healthy option. During lunch, let one of our friendly staff members create and mix up your salad at the Crisp Creations station!  

SIMPLE SERVINGS: Open Lunch, Brunch, and Dinner! The Simple Servings station does not offer foods made with the FDA most-common allergens of peanuts, tree nuts, shellfish, wheat, soy, milk products and eggs. All foods offered will be made without gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contamination of the menu items. Simple Servings: providing convenient, delicious, and secure options.
